Having trained under culinary titans such as\u00a0Johann Lafer, Richard Ekkebus, and Dieter Koschina,<\/strong>\u00a0and honed his craft at the revered three-star \u00dcberfahrt, Romes now leads a kitchen defined by craft, calm, and clarity. Every dish is a study in balance \u2014 where technique meets emotion and every element is deliberate. From the minimalist, design-forward interiors of a reimagined canning factory in Lenzburg, Skin\u2019s has captivated gourmands and critics alike. Now, for the first time, Romes will bring his extraordinary creations to Thailand, reinterpreting his menu with tropical flair and Anantara\u2019s celebrated sense of place.<\/p>\n

\nGuests can expect a six-course tasting menu featuring standout dishes such as Beef Tartar with Wasabi Mayonnaise, a Kombu, Gazpacho of Wild Strawberries with Miso-Ginger Sorbet, and Shrimp with Jalape\u00f1o. Mains include a decadent Pork Cheek with Lettuce and Vin Jaune and Australian Wagyu with Kimchi and Leek, before ending on a vibrant note with Pineapple, Rocket and M\u00e9lange Noir. To elevate the experience further, an optional wine pairing will be expertly curated by Khun Nuch, Anantara Siam, Bangkok\u2019s celebrated Head Sommelier and Tatler Thailand\u2019s Sommelier of the Year 2025.<\/p>\n
